Too high of temp for me though,I cook mine @ 128 degrees for 4-6 hrs depending on the cut. I still use a ton of butter though

Clarified butter lasts far longer than regular butter. You could use it for other things as a cooking fat, or use it again on future steaks.

That's fine if you cook it from the fridge. Leaving it to confit or sous-vide below ~160F makes it a bacteria fuck cabin and can hurt you.
