This is why I am always patient when I’m waiting for food. I would die in these conditions. 5 minutes in and my brain would just shut down. I don’t know how they do it.

I did this for over 20 years. I recently hung up my tongs and apron and moved to an office job. It was fun while it lasted was younger but it takes a toll on you.

I'm not a chef, was it the hot pans in the bin on the floor? I personally have to rinse and cool my pans right away, but I could never work in a kitchen.

True, but not all allergies are that severe. I can get pretty fucked up by ingesting full peanuts but traces are fine.

You are lucky regarding this. Some people could die even by trace amounts of peanut, sesame, or shellfish.

I'm retired more than a few years but I still remember the rush when it all flowed right. I'm blessed to have worked in some very nice upscale restaurants with great people.

Good for you, its a long haul but worth it. I'm in my early retirement working my own place, with my wife and usually just us, but got the boys back this summer and maybe the oldest wants to stay and take over....in this industry there is always a surprise

I miss 3 guys I used to work with. With just two of us, we could run the whole back-of-house like a well-oiled machine. Sometimes I miss working with them, but it might be rose-tinted glasses at this point. The drug and alcohol abuse, inhuman long hours, and kitchen injuries were more common than I’d like. I made it to manager and had to kick out some guys for being high or drunk on the clock.
