Didn't have any chocolate chips to make chocolate chip cookies, and wasn't gonna go to the store at midnight. Also known as cowboy cookies, or no bake cookies. Also, ignore the cast iron in the background, the sink has a bunch of stuff soaking from dinner.
They're cheap and easy(like OP's mother), all you need:
2 cups of sugar
Stick of butter
Half cup milk
4 tablespoons coco powder
2 teaspoons vanilla extract
Pinch salt
Half cup smooth peanut butter
3 cups quick oats
Combine first 4 ingredients in a pot, bring to a boil. Boil exactly 1 minute, no more, no less.
Add vanilla and salt. Stir.
Add peanut butter. Stir til smooth and shiny.
Add oats. Stir til all mixed up and shit.
Spoon onto wax paper. Let cool. Profit.
