Hello imgur. I’ve lurked for 8 years. I’m 26 and run my own pub/restaurant in the Peak District in England. Shitty customers have got me down so I’m posting something on here for the first time. This is a beef sharer we did a few months back, it lived and died just 4 miles from our front door. We love seasonal, local food, some people don’t get it and hate on us. I hope you guys enjoy my beef, maybe I’ll post more.
Edit: front page?! Wow! Thank you all so much, what a wonderful community we have here, your comments are all amazing and insightful so thank you all! For those wondering, my pub is the Pack Horse in Hayfield, Derbyshire

American here, spot on mate. It looks delicious
Castironpeppers
I also used to be a chef at a restaurant, too much stress for a veteran with ptsd, now I only cook at home for family and friends.

Needs more salt, bae.

He is the king
bobbyjo1718
The taste, and the feeling that fueled a decades long dream. Shitty people happen but worked, and toiled for something beautiful and great
ummjakefromstatefarm
I would put it in my mouth and swallow that juicy meat of yours.
LukePayne92
Oh goodness ?
bobbyjo1718
We get in this business for multiple reasons, but you can never forget why you did it. For me it was my grandma and her pasta and cannolis.
jjwk544
I think you meant some people like it, and other people are wrong
DarkSock
If I send you 40 bucks will you put that in an envelope and overnight it to Mississippi for me?
MarkOfTheCovenant
What about the other people. They're the ones that count
LukePayne92
Exactly. It’s so easy to dwell on the 1% who don’t get it. Thank you
shuya82
That looks amazing and I’m not blowing smoke. I want it now!
ScrewHavinAUsername
Don’t let some shitty customers ruin your day! That looks awesome, wouldn’t share. Grrrrr, my meat! Get your hand off my damn plate!
teadrinker25
Pretty sure I can speak for all of Imgur. We do indeed enjoy your beef.
youpaymenow
Looks terrific, if that’s in house made bernaise even better!
LukePayne92
It certainly is in house made Bearnaise!

Answered my question
daesix
Mmf, that looks amazing! Keep it local, keep it fresh! ? ? ? ? ? ? Those naysayers don’t know what they’re missing!
takethatyourogue
Look at the taters, precious
konelhft
What's taters, precious? What's taters, eh?
MySpiritAnimalIsTheUnpopularOpinionPuffin
You can't please everyone. But you have to listen to your critics if you want to be better. Invite some of the negative customers back to
MySpiritAnimalIsTheUnpopularOpinionPuffin
sit down with you personally. Get an idea why they were not impressed and how you could have made the experience better for them.
Baconcoveredanything
“Beef Sharer”? Does that mean I have to share? Because I’m not sharing!!!
entropism
Local cow gets "reserved" by locals and you receive your portion when slaughtered. We do that with produce and occasionally meat.
beardedbeerdeer
I cannot fathom eating raw meat myself, but I know preparing it like that takes effort, so I appreciate your work nonetheless.
MeezerStandardTime
It is an absolutely perfect medium rare, which is hard to get right.
LukePayne92
Thank you, that means a lot!
beardedbeerdeer
Keep it up. Seems like rare meat is pretty popular on imgur.
built4speed
I'm sorry I have but a single upvote to give you, OP. Steak looks great, and that marrow bone... Very nice touch.
MeezerStandardTime
Why is the marrow bone there? Is it a decoration/flourish/garnish? You couldn't eat it, could you? I thought they were for soup.
plzt
Cut open to expose the marrow and cooked appropriately then you can
MeezerStandardTime
Cool. I don't even have any idea what that would taste like!
plzt
It is very meaty and so so rich. Hard to eat more than a bit at any time

Fuck 'em. Keep making stuff like this.
NoseriouslyImnotBatman
Better yet, fuck em and stuff em.
KevorkianScarf
Isn’t that a porn genre for hefty people?
LukePayne92
Yes!! Thank you, that’s the spirit
Heavenissize17socks
I work in retail. Even one bad customer garauntees the good customers extra discounts and concierge level service. Best: Management *agrees!
fbutt09
What's the sauce @OP??
KevorkianScarf
I think @op’s restaurant.
fbutt09
I gathered that, lol. I was referring to the actual sauce in the pic. What did that contain?
Goldensands
Looks like a little leaf bit which makes me think bearnaise
KevorkianScarf
Now that I couldn’t say. Looks like it has bacon in it though. Given the pub style, I’m inclined to think some kind of horseradish perhaps?
Sysko
Been cooking for about 10 years professionally now and this is the type of posts I love keep it up
TheLastSpaceman
You cant make everyone happy, but don't let it affect your attitude to make everyone happy. Those who appreciate it, will do so
LukePayne92
You’re so right, thank you!
SerenePrincess013
I'm allergic to beef (please, don't hate. I'm not vegetarian by choice). But I'd still eat the hell out of that. <3
MeezerStandardTime
Is it a random thing that developed naturally, or did you get a lone star tick bite? There are traces of beef in SO many things, can you
MeezerStandardTime
tolerate a little bit used as a flavoring agent, or do you have to be be really careful?
SerenePrincess013
No ticks that I'm aware of. My body just can't digest beef that's tainted with grain-feed. (Celiacs) So I have to be REALLY careful.
MeezerStandardTime
Wow, you literally can't eat an animal that ate grain? But that means.... well, just about everything but true free-range and grass-fed.
SerenePrincess013
My diet is stupid expensive. I mostly stick to starches & veggies. I hate it, tho. I miss a good, still-bleeding prime rib.
Kyuukichi
So.. You got beef with the locals?
LukePayne92
Not necessarily locals, more those expecting something more traditional!
FernandoRumdebum
Ergh, that's old fart code for "things with flavour bug me".Boil a leg of lamb. Make some gravy with just fat and browning. Boil some veg 1>
FernandoRumdebum
2/ Give em frozen yorkshire puds. In my experience that's what they want when they say traditional. War rationing really fucked the 2/
FernandoRumdebum
3/ palette of the older gen.
FernandoRumdebum
(The gravy thing is real btw. My mam makes it with nothing but fat, usually veg oil, and browning, because that's how they had it as a kid)
hypostatic
like, what "traditional" things do they want? fish n chips?
Arcygenical
Your op looks pretty damn traditional!
LukePayne92
I suppose I mean more in line with fish and chips, pie and mash, ham and egg etc, none of which features on our menu
FeChefImgur
Love your meat, would like to see more of it :P
FeChefImgur
Would also like it in my mouth...
AliBarber
@op I'm popping back to the UK for a holiday next year, what's the name of your pub? I'll definitely come in to try this.
LukePayne92
It’s the pack horse in hayfield, I would love to cook for you!
stunnedmudshark
Dot dot, for whenever I’m in the country!
ForGondor
Hey mate, I'm from Australia. Visited your lovely pub on the recommendation of a mate in sheffield last year. Had a fantastic burger! Cheers
MeezerStandardTime
Small world!
AliBarber
Quick look on Google, that's a cool pub! I miss those kinda places from when I was living there.
AliBarber
Awesome it's added to my list!
benjermima
Don't let bellends from TripAdvisor get you down
AvgWhiteShark
Looks wonderful but if your unable to provide what the customers want then there is a disconnect occurring somewhere in your business model.
theairhurtsmyface
Or- people’s entitlement and expectations aren’t reasonable. I’m part of a family run restaurant and know where this guy is coming from.
LukePayne92
I get what you’re saying, but we are fully booked every weekend. It’s those expecting something more in line with traditional English food
Arcygenical
Dude your the chef of a fully booked restaurant. How many covers? Relax about the old clientele that can’t acclimate.
LukePayne92
I’m finding people struggle to disconnect the from the building, it’s always been a drinkers pub. Now it’s somewhere to eat great food too
EmilyKla
As an American living in England (and I’ve visited the Peak District, gorg), British tastes are funny outside of London. So old school.
LukePayne92
But thank you, it is something I’ve looked at & considered. We are the only ‘modern British gastropub’ in the area, breaking the mould
bedub1
Did you turn the local favorite drinkers pub into a reservation only restaurant?
DeadZygote
I posted a similar sentiment before I saw this comment thread. Good on you for changing it up in a (assuming) smaller village.
AvgWhiteShark
Ah, it was something before you. That's frustrating. Spit balling - maybe a open house/ beef n' beer for the bar crowd at some point?
AvgWhiteShark
With introductions but also a "times they are a chagin" information/menu?
