I make my lasagna gluten free, with ground turkey and roasted tomatoes, onions, mushrooms, zucchini and spinach. And homemade ricotta. It's delicious if inauthentic.

I make lasagne regularly. I really don't liek berchamel, so i eitehr skip it completely or use creme fraiche on the top layer only. And i never understand this american concept of "look how we add more cheese and fat then an entire family should eat in a week and that makes it great". No, it does not.

Don’t misunderstand, I used caps in anger, I hate ricotta. I’ve never made a lasagna. My mom always used it, and now my wife does too. I assumed that’s how it was made and so never ate it.

While I would like to know how to make REAL Italian lasagna (I know this thing here is not it), my creation isn't half bad and does not use heavy cream.

I've seen diners in NJ that use a better bechemel sauce. It is not supposed to be that runny.

Most "italian" food shown here would make real italians rotate in their graves. Not even chefs, every one of them who has ever eaten home-made lasagna or pizza.
It's like Döner Kebab as known in Germany has barely anything to do with the original turkish version served on a plate.

Lasagna is my favorite. Last January I made an incredible lasagna, then from February thru April I was incredibly sick with everything from Covid to sinus infections to shingles and now I’m severely lactose intolerant and can’t have lasagna. So always have lasagna. You never know when you’re eating your last plate of lasagna 😭

Unless Lasagna to your is of the more-cheese-than-anything-else variety it should be faily simple to make it lactose free. The italian original has very little cheese. The bechamel can be done with lactose free milk and the only cheese is parmesan or pecorino wich have very little lactose (< 0,1g/100g).

You can make homemade ricotta REALLY easy with lactaid and lemon juice and a mesh strainer. I made lasagna with hummus once too.

I taste an enormous difference when I make my bolognese with all beef versus beef and pork. I don't bother with veal.

Mixing meats is great, but yeah for something like a ragu it won't make a huge difference. But please do mix beef and pork and whatever else for stuff like meatballs. It's fantastic.

It will. Beef alone isn't tasty enough, but mixed with pork (which is a lot fatter), it'll take your Ragu to a whole new level.

Ground beef and ground pork come with the same range of fat content, anywhere from 10-30%. It's just different flavors.

Random fun fact: deer meat is too lean for ground meat, so they add beef or pork fat when grinding it. Pork fat mix tastes better.

I normally just do standard bechamel - 1:1:10 ratio of Butter : Flour : Milk (e.g., 50g butter, 50g flour, 500ml milk) and then add a good handful extra mature cheddar, enough to make it lovely creamy cheesy texture

Mine's better! 13 cheese expertly blended and patterned to give a unique flavor profile to each bite. Plus, i make my sauce from scratch with a recipe I've been perfecting over the past 20 years.

I didn't use a bechamel sauce. On my bolognaise layers, i make a checkerboard of ricotta and cottage cheese.

Oh. I also don't put all my cheese on the same layer. I do pasta, meat with ricotta and cottage, pasta, cheese blends, pasta, meat and those two, pasta, cheese on top. The top layer gets some different cheeses than the inner cheese layer. 😜

Bechamel is super easy and quick, but pasta takes time, space, and equipment. I'll make pasta for simpler dishes, but the flavor of the pasta isn't as prominent in the complex flavors of lasagna so I'll go with store bought every time.
