It's pretty smart though. You season the whole pan anyway and like this you have a flat, hot surface and room for the bone. Get a good sear.

I do this too but with two skillets. Let's me sandwich the steak and cook both sides with minimal time on "cooking". I Sous Vide first tho

Exactly, it's only between the pans for 60 seconds. I use a sous vide to get the steak to the right temperature first (medium rare/129°).

I prefer the edge, it's tricky to keep it there & it takes a really long to get some kind of heat, but its worth it.

Seasoning is also an anti-rust coating. Generally doesn't last on the bottom for me due to using a gas stove though.

Couple reasons; doing it outside you dont smoke up the whole house, grill gets hotter than stove, and all crust instead of just lines.

cast iron pans have a lot of mass in them so they hold a lot of heat. They also spread out heat evenly. grills put out a lot of uneven heat

so if you put them together, you get a lot of even heat.
