Didn't realize how much gas went into my pancakes...
27m^3 of natural gas over 17hrs took 33gal down to 10, tomorrow I’ll keep going and take it down to 1gal of syrup.

It's maple sap. Very watery right out the tree
You start at 2% sugar and boil until 30%, usually boiling away 97% of it. 30gal of sap makes 1 gal of syrup.

Can you boil in a vacuum? That will lower the boil temp and speed the process.

It varies but as it boils you know things get more liquid ish.

I tried boiling water for an hour to make it more concentrated, but I didn't notice a change in taste or texture. Maybe I had a bad recipe.

I bought it from an organic shop, so I just assumed it was fresh.

You have to buy artisan water from gwyneth paltrow to get the right taste and texture.
