Lightly fried burritos

What we have here:
•1 pound marinated (south-west flavors) beef roast pressure cooked 1 hour, and shredded
•brown rice cooked with tomatoes, cilantro, cut green onion tops, crushed red pepper flakes, and dash of salt
•refried beans
•grated monterey jack and sharp cheddar cheese
•slices of a tomato, halfed
•green onion; lots of the white part towards the root
•*cilantro
•12 flour tortillas

A little of everything on your tortilla, and roll after folding the top and bottom towards the middle. If you overfill it will open up in the pan. The tighter you can make it, the better. Have to say, this skill is a work in progress for me.

A smidgen of butter on each side, and fry on a medium heat until golden brown. See, those could be rolled better! Twelve made, and five gifted to a friend of my son that is going through a tough time.

You can serve this with crema (like sour cream) and salsa. If I'd had some Mexican crema in the fridge, that would have gone in the burrito. There are many ways to alter the recipe, have fun, and make it yours! You could go all veggies, rice, and beans, and then fry with a brush of oil if you are staying away from animal products.

*ps If you don't like cilantro, subbing it with leafy parsley works.
