You couldn't read it if it was written in-universe. The author doesn't want to Tolkien-up their work and write fifty anthologies of all the historical and political data explaining why English is spoken just to tell you a story about dragons. It's not that deep.

Deadwardian era is around the 1400s-1600s, so you're looking at the invention of the printing press and the beginnings of mass book production on the Human side; that junk ends up making its way to the Isles where the Echo mice gnaw at them and begin speaking in some weird foreign tongues all of the continent. Eventually this just gets picked up as the local language.

There's also hints that Humans and Witches probably did share some common ancestry if that works for a better theory. The main evidence there being that canonically a human boy and a witch girl did what mammals tend to do and had a child; you could just chalk that up to sci-fi shenanigans but then again the show was scientifically literate enough to know what the hell an "ortet" was, so one does wonder...
