Roll the skin up and slice it into long strips. In hindsight, I should have first made it into a mask and then cut it into strips. I know for next time...
Place strips on a wire rack in a tray. Salt the fuck out of those bad boys.
The first batch I did the wire rack and it sputtered fat all over the oven, sounded like a popcorn machine. Anyhoo, not critical to have the rack, but I found it does give a slightly crisper result and does make less mess.
Cover with baking paper (not necessary, but makes clean up easier)
Place another tray on top. This helps keep the strips flat
Cook at 240 Celcius for ten minutes.
Remove top tray and baking paper.
Bake for another 10 minutes.
Remove from oven, careful to only burn yourself once.
Look at the crispy fucker. Just look at it.
Like Peppa pig who didn't take any suncream on a beach holiday.

Now flash fry them in oil and they will puff up and be super crispy and light. Add a little seasoning and you've got chicharrones.

Give it a go, it's really easy. If you can't get plain skin, a pork shoulder roast usually has some on that you can cut off & use
