#1 Fallout 76 knows this. It gives you a small inventory and temporarily expands it if you pay them real money. Then when you stop paying it shrinks again. It's one of the many reasons this game sucks so hard.

Hard pass. Being able to carry everything means nothing is important to carry, just carry it all. No strategy, no forethought, no planning and considering. Nothing ruins a game for me more than playing with someone who wants to cheat via modding out all of the gameplay.

Just play Gothic. No weight limit, by design. There's an excellent remake out. Just be aware that nothing and nobody in this world will coddle you. The infinite inventory is the one and only nicety you're being granted. Otherwise, you have to crawl your way from the bottom up. Until you visit a trainer, the nameless hero won't even be able to hold a sword properly. It is so worth it though, since once you do figure out how things work, you can start to bend the game world to your will.

It irks me that in Skyrim using 'player.setav Stamina 1000000' has no impact on carry weight like putting points into Stamina at level up does.

That impact you mention is a function of the leveling up, not the raw stamina value. There's a mod(s) that can alter the amount of carryweight gain per stat per level, even adding gain to stats that had none.

I did a run where I carried everything I possible could. After a while the inventory itself starts to lag / hesitate every add of an item. Also does so on removal of an item. I had one chest at my house that I had filled with so much random garbage that I would put an item in and the game would freeze for a solid 3-4 seconds per item.

You need SkyUI in your life. No lag and you can actually get an overview of your items

Yep. The inventory system had its limits. At least, thank goodness, it didn't have the moronic slot system that so many games have now! (The person who first conceived that should be taken out back and throttled.)

There's a time and place for each system really. A lot of modern slot/grids also have weight limits but also ways to upgrade and can be a progression loop. Inventory and resource management CAN be interesting part of a game but shouldn't be part of every game.
