Instant coffee starts with raw coffee beans.

The beans are roasted at 200 degrees Celsius (392 Fahrenheit). This gives them the characteristic brown color.

The beans are constantly moved, to ensure an even roast without any being burned.

After being roasted, the beens are ground and send to a giant coffee machine.

The flavors are being forced out of the beans with hot steam and high pressure.
You might call it "instant brewing".

After being brewed, the coffee is heated until it condenses into an extract.

This extract is being spread onto a conveyor belt which will take it to the next step:
The freezer.

Inside the freezer is an artic cold: -50 degrees Celsius (-58 Fahrenheit).

The coffee-extract needs to be frozen at this temperature to seal in all the aromas.

Workers who go in here, needs to wear arctic clothings. All inspection is done remotely with cameras, since a person would get frostbites after 30 minutes in this cold.

The frozen coffee is being send to a grounder.

After being ground, the frozen coffee still contains some water.

The granules are put in a low-pressure chamber where the remaining moisture will be removed without making the coffee liquid.
That would cause the amoras to escape quickly.

Here's how it works:

The granules are heated to 60 degrees Celsius (140 Fahrenheit) in low pressure.
The frozen water vaporizes and turns straight into steam.
This process is called "sublimation".

That's how instant coffee is made.

Early 1970s Maxim’s freeze dried coffee revolutionized the instant coffee world. So good. It was more expensive, but worth every dime.

I’ve no idea why but I love instant coffee. I can’t stand fancy coffees that are flavored with any other flavor than extra coffee, though.

The schleem is then repurposed for later batches. Then they take the dinglebop, and push it through the grumbo, where the fleeb is rubbed

My Grandma loved instant coffee. It was a miracle to her generation. I believe Folger’s crystals was her choice. Sanka too.

Ask at a local independent for a range, you’ll really notice the difference. Try a lighter, fruity roast, and a darker chocolate roast!

I understood that some instants use a different solvent than water, to extract the coffee from the beans.

Never buy coffee pre-ground. Too many things, like bugs, can get ground in with it. With beans you control that.
