Instead of stewing, you are stewing! Good idea. Maybe next time I’m stewing over something late at night I’ll make stew instead. Lemons into lemonade is a summertime strategy.

I love good stew. Whether a traditional beef carrots potatoes and a few parsnips and celery, or the more involved ones like mulligatawny and a few others with a dark beer in them when you breathe the beef. I think my favorite one was after a hunting trip and somebody made it with about 3 lb of fresh venison.

Just a thing that helped me when I experienced insomnia for about a week or so and thought I might die from exhaustion, I finally just started writing everything down in a notebook- my fears, hopes, dreams, regrets, loves, etc. Then when I ran out of things to write, I fell asleep. It was all out of my head and racing around competing for priority and I could relax. Try it.

Yes! It's rough and from years of changing it, forgetting things, adding things, and winging it, but here you go:

1-2 lbs stew meat, 2 large carrots slices, 2-3 celery stalks chopped, 5 medium potatoes, 2 tbsp tomato paste, half a cup tomato sauce, small chopped white/yellow onion, 2 cups beef stock (sometimes a bit more), garlic (whatever your heart desires...for me, ALL THE GARLIC), 2 tsp smoked paprika, 1 tsp thyme, 2 dashes Worcestershire sauce, 2 tbsp olive oil, flour (I use wondra in this), and 1/2 cup red wine.

Now here's the key: heat the oven to 325 while browning the meat in a dutch oven. As the meat's browning in the olive oil, periodically add flour to create a nice glaze and semi-slurry. Remove the meat, start cooking the garlic and onions, then add all the veggies, the spices. Add the meat back in once the onions have cooked to translucent. That's when you add the wine, Worcestershire sauce, and tomato paste. Let the wine cook down for 5 minutes-ish, then add the tomato sauce,
