Work visas are a long-term process in the USA. They also get denied for just about any typo or problem with the visa. Frequently, because the process is so complex, the company which hires you handles EVERYTHING about the visa other than collecting the necessary information from you.
Did you lose that job? Who's going to pay for the visa next year? Is the visa specifically tied to that company? Are you no longer legal as of 10 minutes ago? How do you even start the process?
Regardless of whether workers are legal or not, getting scooped up and detained/arrested, threatened and having to re-prove your legality because of orange diaper who has had Navajo scooped up in his ICE raids, yeah not worth it.

Harvesting a field though takes dozens of laborers a few days. Also we don't stock 6 months of goods in the supply chain for factories. Most factories use JIT or just in time inventory systems when possible and minimize available raw materials as much as possible since large stocks are money sitting on a shelf.
Not to mention Canada is America's largest Potash supplier which is critical for fertilizer production. Food instability was already happening with wild and unpredictable weather events and supply chain issues. Now they just lost a huge skilled/trained/seasoned work force and all their supplies just got a big markup in price. I do not envy american consumers trying to buy groceries in the next year. The domino effects are going to be huge at the end of the chain

Honestly? Instead of green produce and fruit, farms affected by labor shortages will start raising more commodity crops like corn and soybeans, where labor can be replaced with machinery. Commodities aren't as profitable as the labor intensive crops, but they're also far less risky. And since profit margins are lower, farms will have to get bigger to support the remaining farmers. Vicious circle.
