It’s muscle memory basically. I could never do this, but years ago I could play Guitar Hero’s ‘Reign in Blood’ without watching the screen. Talk about utterly useless skills..

Both. Memorizing the steps is done largely in chunks based on song/step cues, but not "which step" you take. It's usually "how do I get there from here". Missing a step can throw off an entire run b/c you slip up only 1 note, but haven't encoded the "middle" of a sequence as a potential starting point, so your brain goes "where's the entrance?" for a split second. Games like this can be so tough, but relaxing, massaging your brain with a meditative state of simple, continuous I/O processing.

The screen is always helpful, but you also learn common patterns that match rhythms to help "predict" segments. Similar to scales & chords

Yes. Eventually you play a song enough that you’ll develop kinesthetic memory, but for me I always still processed the notes. You learn to understand where you are in the song.

I think it is similar to playing a music instrument, you half read it, half lern it and half is muscle memory. And it being 3 halfes is the main problem ;)
