Both. Memorizing the steps is done largely in chunks based on song/step cues, but not "which step" you take. It's usually "how do I get there from here". Missing a step can throw off an entire run b/c you slip up only 1 note, but haven't encoded the "middle" of a sequence as a potential starting point, so your brain goes "where's the entrance?" for a split second. Games like this can be so tough, but relaxing, massaging your brain with a meditative state of simple, continuous I/O processing.
