Well, bell peppers have no capsaicin, so no, it wouldn't be a hot sauce. It has to be hot to be a hot sauce, and capsaicin is what makes peppers hot. 0 capsaicin means 0 hot. If you think fermenting bell peppers in salty vinegar makes a hot sauce, then you must think whole wheat bread is spicy.

Tobasco always gets shit on when it is aged for 3 years and meant to add flavor, not burn your asshole out. Like damn, sorry it accents the flavor of an oyster without masking it. No common use hot sauce is actually hot.

My daily driver is tabasco chipotle sauce. Has a bit of heat but the flavor is incredible. I use it on everything.

While I can't agree that it's not "real hot sauce" I dislike tabasco and similar sauces like Cholula and Louisiana Hot Sauce. Sriracha for me.

I make my own hot sauce. It's a ketchup made from mangos instead of tomatoes. For every 5 US fluid ounces (150ml) there are two carolina reapers pureed into it.
It's the only hot sauce that's both hot to me and doesn't taste like a medicine cabinet.

Again, taste not withstanding it IS a hot sauce, just a weak one. "Tabasco is an American brand of hot sauce made from vinegar, tabasco peppers, and salt." That is bare minimum for a hot sauce.
