The white stuff is cacao pulp. It's usually allowed to liquefy and dribble off the seeds, but it can be eaten and has a citrus-y flavor.

To the degree that it's cocoa and not milkfat+sugar, yes. Generally, higher iron content means it's better for you. Aim for 10% per serving.

Pure chocolate has a very high fat content. Milk chocolate has less fat per unit but yeah, the load of sugar is terrible.

Cocoa butter is heart-healthy but many commercial brands of chocolate add unhealthy and/or cheap milk fats and oils. Ex. palm oil in Nutella

I’ve been off sugar since the holidays & recently made some protein bars w/ unsweetened chocolate (100% cacao). It tasted amazing by itself.
