Possibli the last day I’ll get to grill before the cold gets here so I decided to whip up these bad hombres up. Simple recipe and a perfect side dish.
1. Grill the mother fuckas
2. Butter up those bitches
3. Coat with mayo, I know it sounds gross but it is gawddamn delish
4. Sprinkle like a badass with cilantro, queso fresco, lime and tajin
5. I shouldn’t have to say this but enjoy

Elotes, as they are called, require a lot less: 1. Powdered Cotija (or Parmesan), mayo, and chili powder. Heat corn, spread mayo, add cheese

I believe it's a combo of guajillo and ancho peppers. Combined with spices, garlic, and lime juice. Not positive but I think that's right.
