I heard about a guy who wanted to grow his own salsa; he dedicated equal areas of his garden to cilantro, onions, tomatoes, and jalapenos 1/
/2 and found that his ratio was nonsense, and he was greatly burdened with the jalapenos. So he tried to make chipotles and found out that
3/3 you've got to dry the jalapenos before smoking them, or else you get a gross mess of smoked, wet chiles.

That is actually logical, if you harvest green ones, you clear up space faster for a new batch.
But why charge more for the same pepper?
If you sell your peppers green, you can sell more harvests in a year, than if you sell yellow or red. It's third-grade maths, mate.
