This could be just about the worst cut and edited video I've seen for a while.
It's like those toolgifs videos made to be as satisfying as possible to keep you dopamine cycling, but instead they cut every shot a few seconds short and consistently miss the money shot every time amidst the 20,000 jumps cuts.

I worked in a sushi restaurant. I was told by a chef that you could hear when the pan is hot enough to cook tamagoyaki. Unfortunately I never learned how to make it so I never learned what it's supposed to sound like.

Got cleanliness in Japanese cooking I always say that the Japanese get away with third world methods using a first world mind set: do what's efficient and effective but clean as fuck cus our kids will be eating this, dammit. Japanese street food always stands out as super fresh to me, which is why I chuckled when my ex's OCD step mom freaked out at the dead bugs in the light fixtures around the food stalls: "trust me, you want the food cooked in an outside kitchen in Asia"

I've tried this. I've been a cook for over 20 years. Shit is not easy, there is a technique to this art. Was literally told never to use a spatula, only chopsticks. You would be forgiven for being apprehensive about that... wouldn't a spatula/turner work better?

I am a baker and use a product called 'fresh whole egg pulp' that is pasteurised. 7 day shelf life. Not uncommon in the hospitality industry. It goes a shade of pale once it passes its use by date, the brighter or more 'orange' it is means it is as fresh as possible

It is kinda, translated it is called a Rolled Omelet. But the eggs are different, it is a sweetened egg, and super light and fluffy. Eggs are blended with dashi, soy sauce, mirin, and sugar. Then yes basically cooked like an omelet but it definately tastes different.
