Maybe the taste? I believe it's made partly with tripe & even though people don't like the concept of tripe, once it's minced into a fine paste & turned into "sausage", the taste is still great.
Imgur butchers may dispute this.

You might be right.
The closest I can get to actual recipes doesn't mention anything else but meat & lard (aside from that liver one). But they do also state that "each manufacturer has their own secrets" or similar. In Italian.
I would put it past the mortadella producers to add anything that can be turned into a paste & I always thought I tasted (pork-) tripe. Perhaps not.

Yeah. It's sausage, and as it has been said, 'Better not to know how the sausage is made.' I once made sausage with sockeye salmon. It was so gross- think pink popcorn vomit- I couldn't bring myself to try it for several months. It was delicious, really good. But I had to let the 'process' get dimmer before I could eat it.

nope, no tripe. In high-end mortadelle it's mainly from the neck and the shoulder of the pig, the same cut as pulled pork, in the economic ones it's ALL the bits of flesh from the pigs carcasses.
Then the bits get frozen, shredded and mixed with lard and aromatics, then cooked.
If you want the horror version, take a look at the "coppa di testa", that's made with the pig's head and with bigger pieces.

The best pairing is with white pizza or focaccia, and a cold beer.
