So if you ever get into home brewing you find out there are a lot of different hops that taste different. I recommend making tea with those hops till you find one you like cause it’s fking delicious. Also by that time forget the beer, just make hop tea. It’s fking delicious.

I like IPA's but they've completely dominate the market for the last 10 years. Taps, and fridges are usually 80% IPA's... I guess you go where the money is, but jeez people need to expand their pallet.

As a drinker of stouts and porters, I'm often disappointed in how dominant IPAs are in pubs here in the UK. I do like some light ales. Just all to often not enough dark ales are available.

One of our best local breweries makes half a dozen amazing beers. Every bar in town has their Stout on tap though. It has a great name, so it makes sense everyone wants it on the menu
I find it's almost a shame, the "Gaels blood potato ale" is amazing, as is the "insurrection pale ale", but the "back hand of God" gets all the attention (it IS a great stout, and I don't even like stouts)

I find sours are taking over where I live. That, and the vodka soda/iced tea faction taking over the craft beer section, the IPA selection has gone a little downhill.
I am noticing more craft lagers lately, though. I love all ales, not a fan of lagers and I'm on the fence about sours. My partner is the stout man. But to each their own, I'm glad the selection is expanding for the non IPA people

It's the alcohol percentage. IPAs are everywhere because 1 IPA = 2 lagers. After you drink for a while, you build up a tolerance. If I want to get drunk it would take so many lagers that I'd be full before I got drunk. Look at weed as proof of my concept. Back in the 80s weed only had 3% thc on average. Now it's above 15%. More active ingredient means faster high/buzz

I actually tasted an experimental beer from one of the larger "craft" breweries that used spruce tips for bittering. Interesting flavor.

I love spruce tip ales. In my area, the different breweries use Sitka Spruce, and it has a very citrusy flavor to it. I've straight-up eaten the tips off of trees, and yeah, tastes like tree and lemon.

That's me. Beer tastes like fartwater, all wine and spirits tast like paint thinner, the only way to make a cocktail where that flavor doesn't cut through everything else is if it's mixed in like a 1:6 ratio of sweet/sour flavors. So I'm pretty much limited to a weak sex on the beach.
It's basically just a hypersensitivity to bitter flavor and harsh chemicals for me. Same thing if you give me a steak with some char on it, all I'll taste is burnt ash.

I'm surprised by this comment section and this comment in particular, as I loved IPAs before they became the big "thing" for smaller breweries to do, and for larger breweries to ape (ironic). Where I live, most IPA/APAs are solid.
Hell, I've introduced my mother (who normally only rarely drinks Leffe Blonde in terms of beer) to numerous kinds and she's liked maybe 9/10 she's tried (also, she's 75).

Yup. For years, all I drank were hefeweizens, then ambers, eventually moved to IPAs. Now my favorite amber (Mac & Jacks African Amber) tastes "wet" and I flat out dislike hefeweizens...

As an ipa enjoyer myself (some a bit rough ill concede), a question to those that dont care for it: how much soda and other sweet flavors do you drink? Like I cannot handle a carmel macchiato, I dont know how anyone could drink something so sweet much less ask for extra syrup. Ive been curious if theres a correlation.

I drink sweet tea that isn't super sweet and that's it. The hops in IPA are just overwhelming fir me and it ruins the experience. It's just a personal taste.

IPA hater. Also do not enjoy Pine Sol, or overly sweet beverages. Daily caffeine is straight espresso of any roast. If I get a sweetened coffee drink, I usually ask for 70% less sugar. Red wine, never white (except champagne). Stout, porter, other dark beers are my favorites, but I like pretty much every beer other than IPAs and the mass-produced stuff.

I like IPAs the more hops the better, and sodas are far too sweet, and I can't stand coffee with syrups, if it has milk the milk has enough sweetness. Don't think it's correlation I'm just a salty person.

Ale was formulated specifically for flavour. IPA was invented as a way to ship preserved liquid long distances for hydration. Taste wasn't a consideration.

I enjoy IPAs. There was a Mango one from VooDoo Ranger called 1985 which my brother and I were religious to one summer. Some IPAs taste like you're drinking Pine Tree sap though and the smell of them comes out of your pores. At least for me, with the really strong pine sol ones.

The U.S. And yes, very noticeable difference from domestic beers. When I used to drink, Guinness was always a special treat, not an everyday thing.

Why not just have a gose, radler, or a shandy then? It's the IPA's inherent earthy/grassy taste that's generally the issue, so I feel like you want to just remove that hurdle.

Also, fresh. If you're drinking a bitter modern IPA, its probably old. Gotta drink em <2 months old. <1 month ideally. Thats why I don't buy IPAs at the store anymore unless I'm buying them for an event and expect them all to be opened soon. Otherwise they just go bad sitting in my fridge waiting to be opened. (I don't drink them by myself, only open with guests).

Just because something is safe to drink doesn't mean its going to taste good. The dominant flavor of IPAs is hops. Especially these modern IPAs, which are very floral and citrus forward, are full of very volatile alpha acids that are rapidly breaking down after brewing. As they break down, the floral and citrus notes fall off quick and quickly turn the beer into a bitter mess.
Anyone that knows anything about beer will tell you that an IPA is the LEAST shelf stable beer. Safe to drink, sure, >>

but it won't taste like its supposed to. The most "shelf stable" beer is arguably a lambic, which can age gracefully for a decade or even more. Barleywines and Imperial Stouts also can last for years. Check out the best before dates on any craft IPA and compare those to the best before dates on other craft beers, like stouts.

The citra-hops are awesome yes. But I "aquired" the taste for IPA even before they were using these new hops, it took a while, but I love IPA now. All these bitter things take time to get into, coffee, chocolate, IPA, but when you get into it, wow they taste amazing.
