Best fucking broccoli cheddar soup recipe ever

Love broccoli cheesey goodness? It took me years but I've finally perfected this recipe. Simple, cheesy perfection.

Ingredients:
1/2 onion, chopped
1/2 stick (2oz/57g) butter
1/4 cup (34g) flour
1 cup (110g) carrots, shredded
3 cups (468g) broccoli, chopped
2 cups (16oz/475ml) broth (chicken or veggie)
2 cups (16oz/475ml) half + half* (yes, use it!)
1 tsp (5g) mustard powder
1/2 tsp (2.5g) paprika
8oz (225g) shredded sharp cheddar cheese
Salt and pepper to taste

*I have learned that half and half is an American thing. Who knew?? Use 1 cup (250ml) heavy cream + 1 cup (250ml) whole milk.

Melt butter in soup pot.
Add chopped onion
Sautee 2-4 minutes

Add 1/4 cup flour to onion and butter. Sautee 1 minute.

It will be a bit clumpy- don't worry, it's fine.

Whisk in broth and half and half 1 cup at a time. A whisk helps break up any clumps of flour.

YOU MUST USE HALF AND HALF to get the texture of the soup right. I have tried subbing milk for even part of the half and half- it won't turn out right. Just use the half and half. This recipe isn't low calorie but it is DELICIOUS. Do it right and enjoy it.

After you have whisked in your broth and milk, add in the shredded carrots and chopped broccoli. Simmer on medium for 5 minutes and then turn heat to medium low.

This needs to simmer 20-30 minutes until the broccoli is tender. Stir frequently and adjust heat lower if it starts to bubble a lot.

Add 1 tsp (5g) mustard powder + 1/2 tsp (2.5g) paprika. These help the cheese flavor really pop. You can make the recipe without these but it's better with them. Sprinkle in a bit of salt and pepper, too.

After 20 minutes, the broccoli has softened and the mixture has thickened nicely. Now its time to add your cheese!

I buy 8oz bags of shredded sharp cheddar because its the easiest and melts quickly and evenly. You can shred your own if you have endless arm muscles and time. I went the lazy, easy route and have no regrets.

Fold in the cheese... and as soon as its incorporated, you can add salt and pepper to your taste preferences and voila- soup is ready!

That's it! Only takes about 35 minutes from start to finish. I could eat this recipe every day and leftovers are fantastic.

They add anti-caking agents to shredded cheese but it makes a nicer soup than blocks I shred. Have used both- prefer pre-shredded here.

It’s worth mentioning that if you’re using the pre-shredded stuff, you’re also adding some more starch, which will affect the consistency.

Companies use potatoe starch coating on shredded cheese to prevent it from clumping, so that will add some thickness to your soup. Someone>>

Grating their own cheese at home might want to add a 1/2tsp more of flour for the roux to compensate. That’s all.

It probably depends on the quality of the cheese brick being grated- a fancy wedge of Cheddar, sure; a block of Kraft? Not worth the effort.

forms is enormous. Like others said the pre-shredded doesn't melt as well, the mouth feel is a bit off, & it never tastes AS good. Still yum
